Apprentice Chef Culinary Competition

TY students Grace Hynes and Niall Stokes competed in the Apprentice Chef Culinary Competition on Thursday the 28th of February in IT Tralee. They both created and produced a high quality dish promoting the use of Kinsale’s final ingredients and incorporated the theme of ‘Good mood food’ into their dishes! We are still awaiting results of today’s semi final and hopefully will advance to the final stage of the competition in May! However both students did us all proud in IT Tralee getting to this stage of the competition regardless. 

Graces dish was a ‘Fishy trio’ of organic salmon with a crab and lemon crust served with colcannon, roasted parsnip served with a creamy mussel sauce. 

Niall demonstrates a vegetarian dish that included a stuffed cabbage roulade stuffed with lentils and mushroom, with lemon sauce, beetroot purée and sweet potato rosti.
